TOOLS YOU WILL NEED: Measuring cup & spoons, small bowls for assembling ingredients, whisk, large deep skillet, large baking pan (1-inch deep), slotted spoon & spatula. INGREDIENTS:
DIRECTIONS: Preheat the oven to 450 F. Using a shallow bowl, whisk together egg white, buttermilk, flour, salt & cayenne until smooth. Separate onion slices into rings & pick out the 12 largest, reserving remainder for other use. Heat 1-inch of oil in a large nonstick skillet, moderately high heat, until hot but not smoking. Working in batches of 4, dredge onions in flour & dip rings into batter, letting excess drip off, then cook in skillet until golden brown, about 1 minute on each side. Transfer rings as they are browned to a lightly oiled, shallow baking pan. Bake rings in middle of oven, turning once, until crisp & deep golden, 12-15 minutes. SERVINGS: 4 FRIED ONION RINGS |
