FISH TACOS

INGREDIENTS:

bullet12 Corn tortillas, fried or steamed
bullet1 Tbsp fresh lime juice
bullet4 large boneless, skinless fish fillets (fish that cooks white, snapper, cod, etc)
bullet6 green onions, chopped
bullet2 canned chipotle chilies, chopped
bullet3 cups watercress, torn into
bullet3 cup CITRUS SALSA
bullet3 Tbsp oil
bulletSalt & pepper to taste

DIRECTIONS:  Season fish with salt,  pepper & lime juice.  Heat oil in a large skillet & sauté onions for 1 minute.  Add fish & sauté until cooked, about 3 minutes.  Stir in chilies.  Serve in bowls with fish mixture, salsa & watercress so everyone can build there own tacos.

SERVINGS:  6                                            TIME:  20 minutes

SERVING TIPS: Try adding shredded lettuce before the salsa & maybe add some cumin to the fish & lime juice.
