FATOUSH
INGREDIENTS:
 | 2 loaves Syrian bread |
 | 1 bunch parsley, chopped |
 | 1 bunch green onions, chopped |
 | 1 cucumber, peeled & cut in small pieces |
 | 4 tomatoes, cut in small wedges |
 | 1 green pepper, chopped |
 | Juice of 2 lemons |
 | 1 clove garlic, crushed |
 | Salt & pepper to taste |
 | 1/4 cup olive oil |
 | 2 Tbsp chopped mint (or 1 Tbsp dried) |
DIRECTIONS: Toast bread & break
into small pieces, set aside. Combine chopped vegetables & toss to mix
well. Add lemon juice, garlic, salt, pepper & oil & toss with bread
crumbs & serve.
SERVINGS:

TIME: 25 minutes
SERVING TIPS: Do not combine bread
crumbs until ready to serve to keep the bread from getting soggy.
