FATOUSH

INGREDIENTS:

bullet2 loaves Syrian bread
bullet1 bunch parsley, chopped
bullet1 bunch green onions, chopped
bullet1 cucumber, peeled & cut in small pieces
bullet4 tomatoes, cut in small wedges
bullet1 green pepper, chopped
bulletJuice of 2 lemons
bullet1 clove garlic, crushed
bulletSalt & pepper to taste
bullet1/4 cup olive oil
bullet2 Tbsp chopped mint (or 1 Tbsp dried)

DIRECTIONS:  Toast bread & break into small pieces, set aside.  Combine chopped vegetables & toss to mix well. Add lemon juice, garlic, salt, pepper & oil & toss with bread crumbs & serve.

SERVINGS:  6                            TIME:  25 minutes

SERVING TIPS:  Do not combine bread crumbs until ready to serve to keep the bread from getting soggy.
