FALAFEL

INGREDIENTS:

bullet1 cup dried garbanzo (chick peas) beans
bullet2 cloves garlic
bullet1/2 cup chopped onions
bullet1/3 cup packed fresh parsley leaves
bullet3 Tbsp cilantro leaves
bullet1 tsp salt
bullet1/2 tsp ground cumin
bullet1/2 tsp baking soda
bullet1/4 tsp freshly ground black pepper
bullet2 Tbsp all-purpose flour
bulletVegetable oil for deep frying
bullet4 pita breads, halved
bulletLettuce
bulletDiced tomato

DIRECTIONS:  Soak garbanzos overnight in water to cover.  Drain.  In a food processor, mince garlic, add beans, onions, parsley & cilantro. Process until fine.  Add salt, cumin, baking soda, pepper & flour.  Mix well.  Let stand 15 minutes (mixture will be quite soft). Shape into small balls.  Heat 3 inches of oil in a deep pot to 375 F & fry in batches until brown on all sides.  Drain on paper towels.  Fill pita with lettuce, falafel & tomato.

SERVES:  8

SERVING TIPS:  Great with hummus.
