FAJITA WRAP

INGREDIENTS:

bullet1 LB flank steak
bullet1/2 cup vegetable oil
bullet1/2 cup cooking sherry
bullet1 Tbsp chili powder
bullet1 clove garlic, minced
bullet2 Tbsp cumin
bullet8 six-inch flour tortillas
bullet2 cups shredded lettuce
bullet1 LB Monterey jack cheese, grated
bullet6 green onions, chopped
bulletTaco sauce to taste

DIRECTIONS:  Marinate steak in the oil, sherry, chili powder, garlic & cumin for several hours; refrigerated over night if possible.  Broil or grill steak, then carve into thin slices across the grain.  Warm the tortillas.  Place several slices of meat on each tortilla, add lettuce, onions & taco sauce.  Roll as a burrito.

SERVINGS:  8 Fajita's

SERVING TIPS:  Serve with a crisp GREEN SALAD and REFRIED BEANS.  Refried beans can be added to the wrap, if desired.
