ENCHILADAS +/- INGREDIENTS:
DIRECTIONS: Combine beef & onions in microwave safe bowl breaking up the beef. Cover & cook on high 6-8 minutes stirring once. Cook until meat is no longer pink. Stir in the tomato paste, water & taco seasoning. Cover & cook 4 minutes stirring once. Spoon about 1/3 cup of mixture down the center of each tortilla & roll up tightly. Set remaining mixture aside. Place in a 2 1/2 quart dish seam side down. Using microwave safe bowl combine the cheese sauce & chilies, cover & microwave for 1 minute, stir then pour over the tortillas. Spoon the remaining meat mixture down the center of each tortilla, cover with plastic wrap & microwave on high 5 minutes or until well heated. Let stand in the microwave about 5 minutes then serve adding cilantro & olives on top of each. SERVINGS: 4 TIME: 30 minutes ENCHILADAS |
