ENCHILADAS +/-

INGREDIENTS:

bullet1 1/2 LB ground beef
bullet1 onion, chopped
bullet1 can (12 oz) tomato paste
bullet1 cup water
bullet1 envelope taco seasoning
bullet10 (6") flour tortillas, warmed
bullet1 jar (8 oz) processed cheese sauce
bullet1 can (4 oz) chopped green chilies, drained
bulletchopped cilantro for garnish
bulletsliced black olives for garnish

DIRECTIONS:  Combine beef & onions in microwave safe bowl breaking up the beef.  Cover & cook on high 6-8 minutes stirring once.  Cook until meat is no longer pink.  Stir in the tomato paste, water & taco seasoning.  Cover & cook 4 minutes stirring once.  Spoon about 1/3 cup of mixture down the center of each tortilla & roll up tightly.  Set remaining mixture aside.  Place in a 2 1/2 quart dish seam side down.  Using microwave safe bowl combine the cheese sauce & chilies, cover & microwave for 1 minute, stir then pour over the tortillas.  Spoon the remaining meat mixture down the center of each tortilla, cover with plastic wrap & microwave on high 5 minutes or until well heated.  Let stand in the microwave about 5 minutes then serve adding cilantro & olives on top of each.
