EGG SPREAD
INGREDIENTS:
 | 3 oz cream cheese, softened |
 | 1/4 cup mayonnaise |
 | 1/4 cup green or red bell pepper, finely chopped |
 | 1/4 cup celery, finely chopped |
 | 1/4 cup sweet pickle relish, well drained |
 | 2 Tbsp fresh Italian parsley, minced |
 | 1 clove garlic, minced |
 | 8 eggs, hard boiled, shelled, mashed |
 | Salt & pepper to taste |
DIRECTIONS: Combine cream cheese &
mayonnaise mixing well. Add next 5 ingredients beating together to a
smooth consistency then add the eggs & seasoning mixing well. Chill
covered.
SERVINGS: About 3 cups
SERVING TIPS: Spread egg mixture on
crackers & serve as appetizer or spread on toast for breakfast or French bread with lettuce for a
easy lunch.
