EGGS DELMONICO

INGREDIENTS:

bullet2 cups white sauce with sautéed mushrooms (or 1 can cream of mushroom soup)
bullet1/2 cup shredded cheddar cheese
bullet4 eggs, hard boiled, peeled & sliced
bullet2 Tbsp chopped pimento
bullet4 toasted English muffins, cut in half
bulletPaprika to taste
bulletChopped parsley (or cilantro), to taste

DIRECTIONS:  Heat sauce & stir in the cheese.  Simmer until cheese melts.  Add the eggs & pimento stirring gently until completely heated.  Serve over half a muffin topped with parsley and a dash of paprika.
