EGGS DELMONICO
INGREDIENTS:
 | 2 cups white sauce with sautéed mushrooms (or 1 can cream of mushroom
soup) |
 | 1/2 cup shredded cheddar cheese |
 | 4 eggs, hard boiled, peeled & sliced |
 | 2 Tbsp chopped pimento |
 | 4 toasted English muffins, cut in half |
 | Paprika to taste |
 | Chopped parsley (or cilantro), to taste |
DIRECTIONS: Heat sauce & stir in
the cheese. Simmer until cheese melts. Add the eggs & pimento
stirring gently until completely heated. Serve over half a muffin topped
with parsley and a dash of paprika.
