EGGPLANT LASAGNA INGREDIENTS:
DIRECTIONS: Peel & cut eggplant into quarters & then very thin slices. Sauté in oil until it becomes very soft. Chop the onions, mushrooms & garlic & sauté in oil, sprinkle in the spices & mix in the eggplant mixture, set aside. Grate the cheese. Spray a baking pan with spray pan then pour some of the tomato sauce into the pan then top with some crackers. Spread on the sautéed veggies & sprinkle on some spices some parmesan cheese & more sauce, continue to layer until all ingredients are used then top with the cheese. Bake at 350 F (176.67 C) for 35-40 minutes. SERVES: 6 TIME: 1 hour EGGPLANT LASAGNA |
