INGREDIENTS:
DIRECTIONS: Split the vanilla bean & scrape out the seeds. In a bowl over simmering water, whisk together eggs, sugar & vanilla bean seeds. Keep whisking until ribbon is formed & mixture has been heated to 140 F. Hold at this temperature for 2-3 minutes, until mixture thickens. stir mixture into milk. Stir in cinnamon. Refrigerate for at least 2 hours. Whip cream & gently stir into egg mixture. Sprinkle top with nutmeg before serving. SERVINGS: 4 EGGNOG |
