DEVILED EGG 2

INGREDIENTS:

bullet12 hard boiled eggs (see TO BOIL EGGS)
bullet10 slices bacon, diced & cooked crisp
bullet2 Tbsp mayonnaise
bullet2 tsp vinegar
bullet1 tsp Dijon mustard
bullet1/4 tsp salt, or to taste
bulletWhite pepper to taste
bullet2 Tbsp caviar of choice (plus additional for garnish, optional)

DIRECTIONS:  Cool eggs, shell & cut in half length wise.  Place egg yolks in a bowl & mash with a fork.  Put egg whites on a tray.  Add mayonnaise, vinegar, mustard, salt, pepper & caviar to the egg yolk & mix well.  Place mixture in the egg whites & top with additional caviar, if desired.  Chill several hours.
