DESERT POTATO SALAD

INGREDIENTS:

bullet1 LB potatoes, unpeeled, eyes removed, quartered
bullet1/3 cup salsa of choice
bullet2 Tbsp fresh lime juice
bullet1 Tbsp extra virgin olive oil
bullet1/4 tsp salt
bullet1/4 tsp pepper
bullet2 tomatoes, seeded & chopped
bullet1/2 cup black olives, pitted
bullet6 scallions, cut in 1/2" lengths
bullet2 Tbsp cilantro, chopped
bulletGround cumin to taste

DIRECTIONS: Boil potatoes in a covered pan in salt water until just fork tender.  Remove from heat, drain & cool.  Prepare dressing by combining salsa, lime juice, olive oil, salt & pepper.  Mix & set aside.  Add dressing to cooled potatoes & toss.  Add tomatoes, olives, scallions & cilantro.  Toss again.  Adjust seasoning to taste, adding ground cumin & additional salt & pepper.  If potato salad is dry add additional salsa.  Chill.
