DEEP DISH PLUM PIE

INGREDIENTS:

bullet5 cups (about 2 LB) fresh plums, cut in half & seeded
bullet3/4 cup light brown sugar, packed
bullet1 Tbsp butter
bullet2 tsp quick cooking tapioca
bullet1 (9") pie crust, rolled flat
bullet1/4 tsp cinnamon
bulletDash of nutmeg
bulletDash of salt

DIRECTIONS:  Preheat oven to 375 F (190.56 C).  Combine plums, sugar, tapioca, cinnamon, nutmeg & salt in a bowl, mix well.  Let sit 5 minutes then put into a 9" baking dish with 2" sides.  Dot the top with butter & cover with the pie crust.  Crimp edges to seal & poke the center with a fork to vent.  Bake for 40-45 minutes or until crust is golden brown and plum mixture is cooked. 

SERVINGS:  6                                       TIME:  1 hour

SERVING TIPS:  Top with whipped cream or your choice of toppings.
