CRAB QUESADILLAS

INGREDIENTS:

bullet4 (6") flour tortillas
bullet6-8 oz shredded mozzarella cheese
bullet8 oz crab meat
bullet2 Tbsp salsa of choice
bullet1 1/2 Tbsp bell pepper, chopped
bullet1 1/2 Tbsp hopped green onion
bullet2 tsp chopped fresh jalapeno pepper
bullet1 1/2 Tbsp oil
bulletChopped fresh cilantro for garnish, optional

DIRECTIONS:  Preheat oven to 400 F (204.44 C).  Spray a cookie sheet with pan spray. Combine crab, salsa, bell pepper, onion & jalapeno, mixing well.  Spread mixture on 2 flour tortillas.  Add cheese then top with remaining tortillas.  Heat oil in skillet & cook until lightly golden, turn & continue to cook until the other side is golden & cheese melts.  Top with additional salsa.  Remove & cut into wedges, top with cilantro if desired.

SERVES:  2                                       TIME:  20 minutes

SERVING TIPS:  More QUESADILLA.
