COWBOY CAVIAR

TOOLS YOU WILL NEED:  Large bowl, fork for mashing peas, measuring cup & spoons, kitchen knife & cutting board for preparation.

INGREDIENTS:

bullet1 can (15 oz) black-eye peas, rinsed & drained
bullet1/4 cup thinly sliced green onion
bullet1/4 cup red bell pepper finely chopped
bullet2 cloves garlic, minced
bullet2 Tbsp oil
bullet2 Tbsp cedar vinegar
bullet2 jalapeno peppers, seeded & finely chopped (seeds included to increase heat
bullet1/4 tsp cracked black pepper
bulletSalt to taste
bulletFinely chopped cilantro to taste

DIRECTIONS:  Lightly mash peas with the oil.  Add remaining ingredients mixing well.  Chill, overnight if possible.

SERVINGS:  about 3 cups                        TIME:  15 minutes + chill

SERVING TIPS:  Try removing the pulp from inside a tomato & stuff with the Caviar.  While chilling stir a couple of times.  Serve as you would any bean side dish or add to other items such as the tomato, above.
