CORN NACHOS

INGREDIENTS:

bullet1 LB BASIC HAMBURGER
bullet1 can (15 oz) kernel corn, drained
bullet1 can (14 oz) diced tomatoes
bullet8 oz tortilla chips
bullet2 cups Monterey, Jack or cheddar cheese, shredded
bullet1 can (4 oz) diced green chilies
bulletchopped fresh cilantro, optional
bulletSour cream, optional

DIRECTIONS: Preheat oven to 400 F (204.44 C).  Reheat hamburger in a large skillet adding corn & tomatoes, stirring often.  When warm add the green chilies & cilantro, stir to mix well.  Continue until well heated.  Arrange chips in a large shallow dish & spoon mixture over the chips, make two layers if desired.  Top with cheese.  Bake about 2 minutes, or until cheese melts.  Top with sour cream if desired.

SERVINGS:  4                                TIME:  15 minutes

SERVING TIPS:  A nice meal served with rice & fresh fruit.
