CORN CHOWDER
INGREDIENTS:
 | 1 can (15 oz) whole kernel corn, drained |
 | 1 can (14 oz) cream style corn |
 | 1 can (14 oz) diced tomatoes with garlic & onion |
 | 1 can (15 oz) black beans, drained & rinsed |
 | 1/2 cup chicken broth |
 | 1/2 cup water |
 | 1 jalapeno pepper, seeded & finely chopped |
 | cilantro to taste |
DIRECTIONS: Combine corn, beans, broth
& water in a medium saucepan. Bring to a boil, reduce to a simmer, covered
for about 5 minutes. Serve with each bowl garnished with cheese, diced jalapeno
& fresh cilantro.
