COMPOTE

TOOLS YOU WILL NEED:  Large bowl with cover for preparation, large sauce pan (or microwave dish) for cooking, wooden spoon, measuring cup & spoons.

INGREDIENTS:

bullet8 oz dried apple rings
bullet8 oz dried prunes
bullet8 oz dried peaches or pears
bullet8 oz dried apricots
bullet8 oz raisins
bullet1 1/2 bottles of dry red wine (750 ml each)
bullet1 1/2 cups sugar or honey
bullet3 lemons, sliced
bullet2 tsp cinnamon
bulletBlanched almonds to taste, optional

DIRECTIONS:  Soak the dried fruit in the wine for several hours.  Add the honey or sugar according to your taste.  Add the lemon & bring to a boil.  The cook gently for about 30 minutes.  If using a microwave cook in batches 30 minutes at medium power.  Cook until fruit just begins to soften.  Further softening takes place while the mixture is cooling.  Taste & adjust the sweetness using honey.  Lemon rind can be removed after cooling, if desired.  Store covered in the refrigerator until ready to use.
