COLESLAW 2

INGREDIENTS:

bullet3 Pkg (16 oz each) Coleslaw mix (red & green cabbage if possible)
bullet2 Large carrots, grated
bullet1 red bell pepper cut into short slivers
bullet1 yellow bell pepper cut into short slivers
bullet1 large red onion cut in half & then sliced thin
bullet1 1/2 tsp celery seeds
bullet1 3/4 cups mayonnaise
bullet6 Tbsp rice wine vinegar
bulletSalt & pepper to taste

DIRECTIONS:  Combine all vegetables & celery seeds mixing well.  Using a small bowl combine mayonnaise, vinegar, salt & pepper.  Combine mixture with slaw mixing well & refrigerate at least 30 minutes.

SERVINGS:  18                                    TIME:  30 min + refrigeration

SERVING TIPS:  Try garnishing with fresh parsley springs.
