CLUB SANDWICH

INGREDIENTS:

bullet2 large slices Sheepherder's bread (or bread of choice)
bullet2 oz sliced turkey breast (or use left-over shredded turkey)
bullet1 oz Swiss cheese
bullet3 slices cooked bacon
bullet1 oz sliced deli-style roast beef
bulletSliced ripe tomato
bullet1 large slice of red (or sweet) onion, rings separated
bullet1 large slice of bell pepper, ring cut in half
bulletMayonnaise
bulletRomaine or red leaf lettuce

DIRECTIONS:  Spread mayonnaise on both slices of bread.  Add remaining ingredients with lettuce on top.  Cut in half & serve.

SERVINGS:  1                                TIME:  5 minutes

SERVING TIPS:  For school or work lunch boxes place the tomato, onion, bell pepper & lettuce in a zip lock, store overnight in the refrigerator.  Wrap the rest of the sandwich in freezer paper or other moisture proof wrap & free overnight.  When you pack the lunch place the frozen sandwich on the bottom with the bag of vegetables on top, assemble the sandwich at lunch time.
