CHURROS

INGREDIENTS:

bullet2 eggs
bullet1 cup sugar
bullet1 cup milk
bullet1/4 cup melted butter
bullet2 Tbsp baking powder
bullet4 cups flour
bulletOil for deep frying
bulletCinnamon & sugar for sprinkling

DIRECTIONS:  In a large bowl beat together the eggs, sugar, milk, butter & baking powder.  Slowly add the flour, whisking until smooth.  Heat 2-3 inches oil to 375 F (190.56 C) in a deep fryer or heavy kettle.  Spoon batter into a pastry bag with no tip in place & squeeze batter into hot oil in about 5" lengths.  Fry in batches until golden, 1-2 minutes, turning once.  Remove to a paper towel & sprinkle with cinnamon & sugar to taste.
