CHOPPED BEEF SANDWICH

INGREDIENTS:

bullet1 cup cooked beef, finely chopped
bullet1/2 up celery, finely chopped
bullet4 thin slices of a large onion
bullet2 Tbsp sweet pickle relish, drained
bullet1 Tbsp lemon juice
bulletSalt & pepper to taste
bulletItalian salad dressing to moisten
bulletLEMON BUTTER SPREAD
bullet4 sandwich rolls or sliced bread (8)

DIRECTIONS:  Combine beef, celery, pickle, lemon juice, salt & pepper & enough salad dressing to moisten enough to make a spread, mixing well.  Cut sandwich rolls in half & spread lemon butter spread on both sides of the bread.  Add the filling & top with the onion & other slice of bread.  

SERVINGS:  4                                        TIME:  25 minutes

SERVING TIPS:  If prepared the night before for tomorrow's lunch see FREEZE YOUR SANDWICH.
