INGREDIENTS:
 | 3 cups diced zucchini |
 | 1 cup fresh basil leaves |
 | 1 can (14 1/2 oz) chicken broth or home-made
stock |
 | 1/3 cup buttermilk |
DIRECTIONS: Combine zucchini & basil in a
food processor & process until finely chopped. Add broth &
buttermilk & process until smooth. Cover & chill until ready to
serve.
