CHILLED AVOCADO SOUP

INGREDIENTS:

bullet2 large avocado's
bullet2 Tbsp lemon juice, divided
bullet3 tomatoes, peeled, seeded & chopped
bullet3/4 cup sour cream, divided
bullet1 Tbsp chopped green onion
bullet1 Tbsp chopped green bell pepper
bullet1 Tbsp chopped celery
bullet3-4 drops Tabasco
bulletSalt to taste
bullet1 1/4 cup chicken broth
bullet1/2 cup vodka, optional

DIRECTIONS:  Cut avocado in half lengthwise.  Remove seed & scoop our the meat leaving 1/8 to 1/4" in the shell.  Do not break the skin.  Brush the inside of the shells with 1 Tbsp lemon juice then place in the freezer.  Blend the avocado, tomatoes, 1/2 cup sour cream, onions, bell pepper, 1 Tbsp lemon juice, Tabasco & salt in a blender & process.  Slowly add the broth, blending, check seasoning & chill at lest 2-3 hours.  To serve spoon soup into the frozen avocado shells, top with a small amount of sour cream & pass a small pitcher of vodka to add, if desired.

CHILLED AVOCADO SOUP
