CHILLED AVOCADO SOUP INGREDIENTS:
DIRECTIONS: Cut avocado in half lengthwise. Remove seed & scoop our the meat leaving 1/8 to 1/4" in the shell. Do not break the skin. Brush the inside of the shells with 1 Tbsp lemon juice then place in the freezer. Blend the avocado, tomatoes, 1/2 cup sour cream, onions, bell pepper, 1 Tbsp lemon juice, Tabasco & salt in a blender & process. Slowly add the broth, blending, check seasoning & chill at lest 2-3 hours. To serve spoon soup into the frozen avocado shells, top with a small amount of sour cream & pass a small pitcher of vodka to add, if desired. SERVES: 4 CHILLED AVOCADO SOUP |
