INGREDIENTS:
 | 3 LB ground bison |
 | 2 large onions, chopped |
 | 1 can (16 oz) peeled tomatoes |
 | 1 Tbsp black pepper |
 | 1 can (25 oz) kidney beans, drained & rinsed |
 | 1 can (25 oz) chili beans |
 | 1 tsp cayenne pepper |
 | 4 cups ketchup |
 | 1-2 Tbsp chili powder, or to taste |
 | 1 tsp minced garlic |
 | 2 tsp minced cilantro |
 | 1 tsp dried thyme |
 | 1/2 tsp powdered mustard |
DIRECTIONS: Using a cast iron skillet brown
the bison. Transfer to a large pan & stir in remaining ingredients
& simmer 1 hour, adjust seasoning & continue to simmer until chili is
your desired consistency.
SERVINGS: 10
TIME: 1 hour +
SERVING TIPS: Top with shredded cheddar
cheese. A great filling for baked potatoes.
