CHILI

INGREDIENTS:

bullet3 LB ground bison
bullet2 large onions, chopped
bullet1 can (16 oz) peeled tomatoes
bullet1 Tbsp black pepper
bullet1 can (25 oz) kidney beans, drained & rinsed
bullet1 can (25 oz) chili beans
bullet1 tsp cayenne pepper
bullet4 cups ketchup
bullet1-2 Tbsp chili powder, or to taste
bullet1 tsp minced garlic
bullet2 tsp minced cilantro
bullet1 tsp dried thyme
bullet1/2 tsp powdered mustard

DIRECTIONS:  Using a cast iron skillet brown the bison.  Transfer to a large pan & stir in remaining ingredients & simmer 1 hour, adjust seasoning & continue to simmer until chili is your desired consistency.

SERVINGS:  10                                TIME:  1 hour +

SERVING TIPS:  Top with shredded cheddar cheese.  A great filling for baked potatoes.
