CHICKEN STEW

INGREDIENTS:

bullet1 Pkg taco seasoning, divided
bullet4 boneless, skinless chicken thighs or breast, cut in 1" pieces
bullet2 cans (14 oz) stewed tomatoes, with juice
bullet1 Pkg (9 oz) frozen green beans
bullet1 Pkg (10 oz) frozen corn
bullet4 cups tortilla chips
bullet1/2 onion, finely chopped
bullet1 jalapeno pepper, seeded & finely chopped
bullet1/2 green bell pepper, coarsely chopped
bullet1 stalk celery, finely chopped

DIRECTIONS:  Place half the taco seasoning in a bowl & add chicken.  Mix to coat well.  Using a large skillet coated with pan spray cook & stir chicken 5 minutes over medium heat.  Add tomatoes, beans, corn, remaining taco seasoning, onion, jalapeno pepper, bell pepper & celery.  Bring to a boil then reduce heat to medium-low & simmer 10 minutes.  Top with tortilla chips just before serving.

SERVINGS:  4                               TIME:  25 minutes

SERVING TIPS:  Top servings with salsa of choice, shredded cheese and/or sour cream, if desired.

CHICKEN STEW
