CHICKEN SOUP
INGREDIENTS:
 | 1 chicken (4-5 LB) cleaned, quartered & excess fat removed |
 | 12 cups water |
 | 3-4 carrots |
 | 1-2 stalks celery |
 | 1-2 parsnips |
 | 1 onion |
 | 1 Tbsp salt |
 | 1/4 tsp pepper |
 | 1 parsley root, chopped |
 | 1 clove garlic |
 | 1 sweet potato, peeled & cut in pieces |
 | Fresh dill to taste |
DIRECTIONS: Fill an 8 quart pot with
the water & bring to a boil. Add chicken & vegetables, salt &
pepper. Add dill to taste. Bring to a boil & reduce to a simmer
cooking covered for 2 hours. Remove the garlic. Serve hot.
