CHICKEN SOUP

INGREDIENTS:

bullet1 chicken (4-5 LB) cleaned, quartered & excess fat removed
bullet12 cups water
bullet3-4 carrots
bullet1-2 stalks celery
bullet1-2 parsnips
bullet1 onion
bullet1 Tbsp salt
bullet1/4 tsp pepper
bullet1 parsley root, chopped
bullet1 clove garlic
bullet1 sweet potato, peeled & cut in pieces
bulletFresh dill to taste

DIRECTIONS:  Fill an 8 quart pot with the water & bring to a boil.  Add chicken & vegetables, salt & pepper.  Add dill to taste.  Bring to a boil & reduce to a simmer cooking covered for 2 hours.  Remove the garlic.  Serve hot.
