CHICKEN PIZZA

TOOLS YOU WILL NEED:  Large heavy skillet, pizza pan, no stick pan spray, kitchen knife, measuring cup & spoons, spatula, cutting board bowls for assembling ingredients.

INGREDIENTS:

bullet2 boneless skinless chicken breast, cut to 1/2-inch pieces
bullet1 1/2 cups SALSA of choice
bullet1 Pkg (16 oz) Italian pizza curst or see PIZZA CRUST 2
bullet1/2 cup thinly sliced red bell pepper
bullet1 1/2 Tbsp chopped fresh cilantro, or to taste
bullet1 1/2 Tbsp sliced black olives
bullet1 Pkg (8 oz) Mozzarella & cheddar shredded cheese

DIRECTIONS:  Spray large skillet with no stick cooking spray.  Add chicken & cook over medium heat until chicken is cooked through, stirring occasionally.  Stir in salsa, reduce heat to medium-low & simmer 6 minutes.  Place pizza curst on a pizza pan sprayed with no stick spray & spoon chicken mixture over pizza crust; sprinkle with remaining ingredients.  Bake in preheated 400 F oven for 10-15 minutes or until cheese is melted.

SERVINGS:  1 Pizza
