CHICKEN PITA SANDWICH

INGREDIENTS:

bullet4 cups diced cooked chicken
bullet1 Pkg (8 oz) cream cheese, softened
bullet1/2 cup finely diced celery
bullet2 pears (or peaches), peeled, seeded & diced
bullet2 cloves garlic, finely chopped
bullet2 tsp fresh thyme, chopped
bullet3/4 cup chopped pecans, toasted
bulletRomaine lettuce
bulletSalt & pepper to taste
bullet6 (6 inch) pitas, cut in half (to form pockets)

DIRECTIONS:  Combine cream cheese, celery, garlic & thyme mixing well.  Fold in pecans, pear & chicken & mix well.  Place a layer of lettuce in the bottom side of each pita & spoon the chicken mixture on top, add another layer of lettuce & serve.

SERVINGS:  6                                    TIME:  25 minutes

SERVING TIPS:  Mixture can be prepared the night before then added to the pita.  If packing a lunch see PACKING A LUNCH.
