CHICKEN PITA SANDWICH
INGREDIENTS:
 | 4 cups diced cooked chicken |
 | 1 Pkg (8 oz) cream cheese, softened |
 | 1/2 cup finely diced celery |
 | 2 pears (or peaches), peeled, seeded & diced |
 | 2 cloves garlic, finely chopped |
 | 2 tsp fresh thyme, chopped |
 | 3/4 cup chopped pecans, toasted |
 | Romaine lettuce |
 | Salt & pepper to taste |
 | 6 (6 inch) pitas, cut in half (to form pockets) |
DIRECTIONS: Combine cream cheese,
celery, garlic & thyme mixing well. Fold in pecans, pear & chicken
& mix well. Place a layer of lettuce in the bottom side of each pita
& spoon the chicken mixture on top, add another layer of lettuce &
serve.

SERVING TIPS: Mixture can be prepared
