CHICKEN IN A POT

INGREDIENTS:

bullet2 carrots, sliced
bullet2 onions, sliced
bullet2 stalks celery, cut to 1-inch pieces
bullet1 (3 to 4 LB) whole chicken
bullet1 tsp salt
bullet1/2 tsp pepper
bullet1/2 cup water (or dry white vermouth)
bullet1/2 tsp fresh basil, chopped

DIRECTIONS:  Put carrots, onion & celery in bottom of crock pot.  Add whole chicken.  Top with salt, pepper & liquid.  Sprinkle basil over top of chicken.  Cover & cook on low 8 to 10 hours (high 3 1/2 to 5 hours using 1 cup water).  Remove chicken & vegetables using a spatula.
