CHEESE CORN BREAD

INGREDIENTS:

bullet1 cup all purpose flour
bullet1 cup yellow corn meal
bullet2 Tbsp sugar
bullet1 Tbsp baking powder
bullet1/2 tsp salt
bullet1 cup milk
bullet1/4 cup apple sauce
bullet2 egg whites, stiffly beaten
bullet1/4 cup shredded cheddar cheese

DIRECTIONS:  Preheat oven to 400 F (204.44 C).  Spray a 8 inch square baking pan with nonstick spray.  Combine the flour, cornmeal, sugar, baking powder & salt in a bowl.  In a separate bowl combine the milk, egg whites & apple sauce.  Stir apple sauce mixture into the flour mixture until moistened.  Spread batter into the baking pan & bake for 20 minutes.  Remove from the oven & sprinkle the top with cheese.  Return to oven & bake 5 minutes more or until cheese has melted & toothpick inserted in the center comes out clean.  Cut into squares & serve warm.
