CELERY SLAW

INGREDIENTS:

    SLAW

bullet1 medium green cabbage, shredded
bullet1/2 LB fresh green beans, cut in 1/2 inch pieces
bullet1 small onion, grated
bullet1 large carrot, finely grated
bullet2 ribs celery, with leaves, finely chopped

    DRESSING

bullet1/2 cup cider vinegar
bullet1/2 cup sugar
bullet1 tsp caraway seeds
bullet1 tsp celery seeds
bullet1/2 tsp turmeric
bullet1 tsp salt
bullet3 Tbsp canola oil
bullet3 Tbsp water

DIRECTIONS:  For the dressing combine the vinegar, sugar, caraway seeds, celery seeds, turmeric, salt, canola oil & water in a sauce pan.  Cook for several minutes over medium heat until the mixture boils & the sugar is dissolved.  Remove from the heat & cool.  For the slaw, cook the beans for about 4-5 minutes or until just tender.  Drain & rinse under cold water.  In a large bowl combine the shredded cabbage, onion, celery & carrots.  Add the cooled beans, dressing & toss.  Refrigerate overnight.  Lightly toss again before serving.
