CATFISH

INGREDIENTS:

bullet4 catfish filets (8 oz each)
bulletMelted butter

COATING:

bullet1 cup Italians seasoned bread crumbs
bullet1 cup crushed corn flakes
bullet1/4 cup finely chopped peanuts
bullet1 tsp garlic powder
bullet1 tsp oregano
bullet1/2 tsp seasoned salt
bullet1/2 tsp black pepper

WASH:

bullet1 cup buttermilk
bullet2 eggs

DIRECTIONS:  Preheat oven to 450 F.  Combine the coating ingredients in a plastic bag & shake to mix well.  Beat eggs into buttermilk.  Dip the fish filet in the wash, place in the plastic bag & shake to coat.  Place on a wire rack that you have sprayed with pan coating then put the rack on a cookie sheet.  Place the leftover coating over the fish & drizzle with melted butter.  Bake for about 20 minutes or until tops start to brown & fish is done.  Do not overcook.
