CARROT SALAD

INGREDIENTS:

bullet2 cloves garlic
bullet1/2 bunch fresh Italian parsley, stems removed
bullet1 LB fresh carrots, peeled
bullet2 Tbsp fresh lemon juice
bullet2 Tbsp orange juice
bullet4 Tbsp extra virgin olive oil
bullet1/2 tsp salt, or to taste
bulletPepper to taste

DIRECTIONS:  Place the garlic & parsley in a food processor & chop.  Add the carrots, lemon & orange juice, oil, salt & pepper & process until the carrots are well chopped but not pureed.  Adjust seasonings & serve.

SERVINGS:  6                                        TIME: 20 minutes

SERVING TIPS: Add grated celery root, if desired.  Use radish slices and/or orange slices as garnish.
