CARROT PIE
INGREDIENTS:
 | 1 gram cracker pie crust, 9-inch |
 | 1/3 cup lemon concentrate |
 | 2 1/4 cups finely chopped carrots |
 | 1/4 sugar |
 | 1 quart vanilla ice cream, softened |
DIRECTIONS: Combine lemon, carrots
& sugar in a blender & process until smooth. Transfer to a bowl
& fold in the ice cream, mixing well. Pour into the pie crust, cover
& freeze 8 hours. Thaw slightly to cut & serve.
