CARAMELIZED POTATOES INGREDIENTS:
DIRECTIONS: Cook potatoes in boiling salted water until tender about 20 minutes. Cool & remove skins & cut into quarters. Heat sugar in a heavy skillet, reduce heat & cook until sugar melts, caramelizes turning a light brown, stir in melted butter & add potatoes, in batches heating over low to medium heat mixing potatoes to coat & heat the potato. Keep warm in a large bowl while heating the remaining potatoes. Sprinkle with salt & pepper then pour remaining caramel over the potatoes & serve. SERVINGS: 6-8 TIME: 40 minutes CARAMELIZED POTATOES |
