CARAMELIZED POTATOES

INGREDIENTS:

bulletSmall red potatoes, unpeeled (around 30 or 2 LB)
bullet1/2 cup sugar
bullet1/2 cup butter, melted
bullet1/4 tsp salt, or to taste
bullet1/8 tsp pepper, or to taste

DIRECTIONS:  Cook potatoes in boiling salted water until tender about 20 minutes.  Cool & remove skins & cut into quarters.  Heat sugar in a heavy skillet, reduce heat  & cook until sugar melts, caramelizes turning a light brown, stir in melted butter & add potatoes, in batches heating over low to medium heat mixing potatoes to coat & heat the potato.  Keep warm in a large bowl while heating the remaining potatoes.  Sprinkle with salt & pepper then pour remaining caramel over the potatoes & serve.
