CABBAGE SOUP 2

ASSEMBLE INGREDIENTS:

bullet2 cups shredded cabbage
bullet1 cup chopped leeks
bullet1/2 cup diced carrots
bullet1/2 cup diced celery
bullet2 tsp margarine
bullet2 cloves garlic, crushed
bullet4 cups water
bulletSalt & pepper to taste
bullet2 vegetable bouillon cubes, crushed

ASSEMBLE TOOLS:

bulletLarge stock or soup pot with lid
bulletLarge long handle spoon for stirring

PREPARATION:  Put margarine in the pot, add the carrots, celery, garlic, leeks & cabbage & sauté until vegetables are tender.  Add water & bouillon, bring to a boil then reduce heat & partially cover.  Simmer stirring often, until vegetables are soft & soup is done, about 20-30 minutes.  Salt & pepper to taste.
