BROILED EGGPLANT

INGREDIENTS:

bullet1 LB eggplant peeled & cut into 1/2" slices
bulletButter
bulletSalt & Pepper to taste
bullet1 can (8 oz) tomato sauce
bullet1 clove garlic, minced

DIRECTIONS:  Butter both sides of eggplant slices & place in a broiling pan.  Broil about 3" from flame or cook on the grill until tender, turning once.  Combine tomato sauce & garlic, warm in a sauce pan & serve over the eggplant.

SERVINGS:  2-3                                TIME:  25 minutes
