BROCCOLI SALAD
INGREDIENTS:
 | 1 large head fresh broccoli, blanched to crisp, tender & rinsed in
cool water |
 | 1/2 cup diced black olives |
 | 6 radishes, cut into quarters |
 | 2-3 green onions, cut lengthwise into slivers |
 | 2 tomatoes, cut into wedges |
 | 1/2 cup unsalted peanuts |
DRESSING:
 | 9 Tbsp olive oil |
 | 3 Tbsp wine vinegar |
 | 1 tsp salt, or to taste |
 | 3/4 tsp pepper, or to taste |
 | 1/4 tsp dry mustard |
DIRECTIONS: Cut broccoli into florets &
place in a large bowl. Add the olives, radish & onion. Combine
dressing ingredients mixing well & add to the bowl, mixing well to
coat. Add the tomatoes & peanuts, mix & serve.
