BROCCOLI SALAD

INGREDIENTS:

bullet1 large head fresh broccoli, blanched to crisp, tender & rinsed in cool water
bullet1/2 cup diced black olives
bullet6 radishes, cut into quarters
bullet2-3 green onions, cut lengthwise into slivers
bullet2 tomatoes, cut into wedges
bullet1/2 cup unsalted peanuts

DRESSING:

bullet9 Tbsp olive oil
bullet3 Tbsp wine vinegar
bullet1 tsp salt, or to taste
bullet3/4 tsp pepper, or to taste
bullet1/4 tsp dry mustard

DIRECTIONS: Cut broccoli into florets & place in a large bowl.  Add the olives, radish & onion.  Combine dressing ingredients mixing well & add to the bowl, mixing well to coat.  Add the tomatoes & peanuts, mix & serve.

SERVINGS:  6                                TIME:  15-20 minutes
