BRISKET 2

INGREDIENTS:

bullet1 brisket of beef, 4 to 5 LB, lean
bullet2 cups mixed dried pitted prunes
bullet1 1/2 cups water
bullet2 medium onions, sliced
bullet1 cup white dry vermouth or wine
bulletSalt & pepper to taste

DIRECTIONS:  Brown the meat in a heavy pot.  Add onions & continue to brown over medium heat.  Add the wine, water & prunes & reduce to a simmer, add salt & pepper, cover & simmer for 2 1/2 hours or until tender.  Remove roast from the pot.  Skim the fat from the sauce.  Slice the meat & arrange on a platter topped with the prune gravy.
