BREAKFAST BURRITO

TOOLS YOU WILL NEED:  2 medium bowls, table knife & spoon, measuring spoons & cups, baking sheet, foil, basting brush, butter flavored pan spray.

INGREDIENTS:

bullet1/2 cup non-fat ricotta cheese
bullet1/2 cup non-fat cream cheese, softened
bullet1 1/2 cup mixed fruit, see Note below
bullet4 tsp honey
bullet4 whole wheat taco size flour tortilla

DIRECTIONS:  Preheat oven to 350 F.  Combine ricotta & cream cheese in a bowl mixing until smooth.  Combine fruit & honey mixing to coat the fruit.  Spoon tortillas with cheese mixture then divide the fruit among the tortillas.  Fold up the bottom of each then roll the tortilla burrito style; place each seam side down on a baking sheet lined with foil.  Spray the top of each with pay spray then with a small amount of water.  Bake uncovered 5-8 minutes or until the cheese is melted.

SERVINGS:  4                                    TIME:  20 minutes

SERVING TIPS:  Use your choice of fruit such as 1/2 cup each raspberries, blueberries, strawberries, sliced apple, peach, oranges pears, etc.
