BLUE CHEESE OMELET

INGREDIENTS:

bullet8 eggs
bullet3 Tbsp milk
bullet1 Tbsp finely chopped red onion
bullet1/2 tsp salt, or to taste
bullet1/4 tsp pepper, or to taste
bullet2 Tbsp butter
bullet1 large clove garlic, minced
bullet3 oz crumbled blue cheese
bullet3 Tbsp chopped fresh basil

DIRECTIONS:  In a large bowl beat eggs, milk, salt & pepper until blended.  Heat a large skillet or omelet pan over medium-high heat.  Add butter & garlic &stir until butter has melted.  Pour in egg mixture & cook until omelet is almost set, but still moist & creamy on top.  As eggs set lift cooked portion around edges of the pan to allow uncooked eggs to flow underneath.  Gently shake pan to keep omelet from sticking.  Sprinkle top with cheese & basil continue to cook until cheese is melted then fold omelet in half & slide onto plate. 

SERVINGS:  4                                TIME:  25 minutes

SERVING TIPS:  Great with fresh fruit & sour cream.
