BLINTZ

TOOLS YOU WILL NEED:  5-inch skillet, spatula, mixing bowl, measuring cup & spoons, whisk & large spoon.

INGREDIENTS:

bullet3/4 cup sifted all-purpose flour
bullet1/2 tsp salt
bullet1 tsp double-acting baking powder
bullet2 Tbsp powdered sugar
bullet2 eggs
bullet2/3 cup milk
bullet1/3 cup water
bullet1/2 tsp vanilla (or 1/2 tsp grated lemon rind)

DIRECTIONS:  Sift together flour, slat, baking powder & sugar.  Make a well in the sifted ingredients.  Beat together eggs, water, milk & vanilla & pour into the well.  Combine the ingredients, ignoring the lumps.  Heat a 5-inch skillet & add a few drops of oil.  Spoon a small amount of batter into the skillet & tips the skillet to spread the batter in a thin layer over the bottom.  Cook over medium heat.  When the bottom is brown turn it over gently & brown the other side, adding a few drops of oil, if needed.  Remove the blintz; spread your desired filling on the blintz & carefully roll it up; top it with grated cheese or powdered sugar, if desired.  Set aside while you prepare the rest of the blintzes.

SERVINGS:  14 (5-inch blintzes)

SERVING TIPS:  You can cook the blintzes, transfer to a sheet of plastic, continue cooking blintzes adding to the stack, each blintz separated with plastic.  Blintzes can be frozen for use later; remove, thaw, add filling, roll up & heat in the fry pan or microwave.  Some suggested fillings would be creamed vegetables such as spinach, fruit compote, cottage cheese, cream cheese.
