BEET SALAD
INGREDIENTS:
 | 1/4 cup wine vinegar |
 | 2 Tbsp olive oil |
 | 2 tsp sugar |
 | 1 clove garlic, finely chopped |
 | 1 small onion, cut into thin slices (about 1/2 cup) |
 | 2 cans (16 oz each) caned sliced beets, drained |
 | 1/3 cup stuffed green olives |
DIRECTIONS: Combine vinegar, oil &
garlic mixing well. Place the onion, beets & olives in a bowl &
add the dressing, toss to well coat. Serve at room temperature or chilled.
