BEET SALAD  

INGREDIENTS:

bullet1/4 cup wine vinegar
bullet2 Tbsp olive oil
bullet2 tsp sugar
bullet1 clove garlic, finely chopped
bullet1 small onion, cut into thin slices (about 1/2 cup)
bullet2 cans (16 oz each) caned sliced beets, drained
bullet1/3 cup stuffed green olives

DIRECTIONS:  Combine vinegar, oil & garlic mixing well.  Place the onion, beets & olives in a bowl & add the dressing, toss to well coat.  Serve at room temperature or chilled.

SERVINGS:  8                                    TIME: 20 minutes
