BEARNAISE SAUCE 2

INGREDIENTS:

bullet2 Tbsp vinegar
bullet1 Tbsp water
bullet1 tsp minced onion
bullet4 egg yolks
bullet4 Tbsp butter, melted
bullet1/2 tsp salt
bullet1/4 tsp paprika
bullet1/2 Tbsp minced parsley
bulletPepper to taste (white pepper preferred)

DIRECTIONS:  In the top of a double boiler, heat vinegar, water & onion.  Allow to cool then return to the heat, add egg yolks, one at a time, stirring constantly until smooth.  Gradually add butter & spices.  Season with pepper to taste.  Serve warm.

SERVING:  1/2 cup
