INGREDIENTS:
 | 2 Tbsp vinegar |
 | 1 Tbsp water |
 | 1 tsp minced onion |
 | 4 egg yolks |
 | 4 Tbsp butter, melted |
 | 1/2 tsp salt |
 | 1/4 tsp paprika |
 | 1/2 Tbsp minced parsley |
 | Pepper to taste (white pepper preferred) |
DIRECTIONS: In the top of a double boiler,
heat vinegar, water & onion. Allow to cool then return to the heat,
add egg yolks, one at a time, stirring constantly until smooth. Gradually
add butter & spices. Season with pepper to taste. Serve warm.
SERVING: 1/2 cup
