BARBEQUE SAUCE 2

INGREDIENTS:

bullet1/4 cup extra virgin olive oil
bullet1 onion, chopped
bullet1 Tbsp chopped garlic
bullet2 large tomatoes, peeled, seeded, chopped
bullet1/2 cup apple cider
bullet1/4 cup balsamic vinegar
bullet2 Tbsp catsup
bullet1 1/2 Tbsp chopped fresh basil
bullet1 1/2 Tbsp Dijon style mustard
bullet1 1/2 Tbsp sugar
bullet1/2 tsp ground coriander

DIRECTIONS:  Using a deep skillet heat oil.  Sauté onions & garlic until translucent, about 5 minutes.  Add remaining ingredients & bring to a boil.  Reduce heat & simmer for 30 minutes, stirring occasionally.  Remove to a blender & process until smooth.  Refrigerate covered until ready to use.  The longer it sits the better it will be, overnight if possible.

SERVINGS:  8-10 lb of ribs
