DIRECTIONS: Puncture the potato & microwave until soft, about 6-8 minutes. Combine the pineapple & sour cream. Slice the top lengthwise, push the ends to open the potato. Fill the opening with sour cream & parsley. Sprinkle with parsley & serve. SERVINGS: 1 TIME: 15 minutes SERVING TIPS: If desired add a small amount of cooked bacon pieces.
