BAKED HAM

INGREDIENTS:

bulletHalf smoked ham, shank end
bullet15 whole cloves
bullet6 dry chipotle peppers, ground in a spice mill
bullet6 Tbsp paprika
bullet2 Tbsp garlic powder
bullet2 tsp dried oregano
bullet2 Tbsp salt, or to taste
bullet1 tsp ground black pepper
bullet2 tsp ground coriander
bullet1 cup packed dark brown sugar
bullet1/2 cup apple cider

DIRECTIONS:  Preheat oven to 425 F (218.33 C).  Place the ham fat side up in a large roasting pan & roast uncovered for 1 hour.  Remove from the oven then remove the rind being careful not to remove any fat.  Using a knife score the fat diagonally to form a diamond pattern.  Insert whole cloves into each of the diamonds.  Combine the spices, brown sugar & cider in a small bowl, mixing well.  Brush the glaze all over the ham.  Return the ham to the oven & cook another hour, basting occasionally with the glaze.  The meat should register 180 F when a thermometer is inserted.

SERVES:  8                                        TIME:  2 hr 20 minutes

SERVING TIPS:  Once done place the ham on a platter with kale leaves & cover with foil to allow juices to set.  Do not over cook.
