BAKED COD 2

TOOLS YOU WILL NEED:  Baking sheet, pan spray, basting brush, measuring cup & spoons, small mixing bowl, mixing spoon & fork, spatula.

INGREDIENTS:

bullet4 fillets (6 oz each) cod
bullet3 Tbsp olive oil
bullet1/2 tsp salt
bulletBlack pepper to taste
bullet1/2 cup fresh bread crumbs
bullet1/2 yellow onion, minced
bullet1/3 cup chopped cilantro
bullet1 tsp lemon zest
bullet1/4 tsp ground cumin
bullet1/4 tsp ground cardamom
bullet1/8 tsp ground red pepper

DIRECTIONS:  Preheat oven to 425 F.  Place fillets on greased baking sheet.  Brush with 2 Tbsp of the olive oil, season with salt & pepper to taste.  Combine the bread crumbs, onion, cilantro, lemon zest, cumin, cardamom & red pepper in a small bowl.   Stir in remaining tablespoon olive oil.  Divide mixture over the top of fish fillets.  Bake until fish in opaque & flakes easily with a fork, about 12 minutes.
