BAKED BACON & EGGS

INGREDIENTS:

bullet1 tsp butter
bullet1 strip bacon
bullet1 egg
bullet1 slice of pineapple (canned or fresh), or half fresh peach **
bullet1 Tbsp salsa of choice
bulletSalt & paprika to taste

DIRECTIONS:  Preheat oven to 325 F (162.78 C).  Lightly brown the bacon.  Use the drippings to lightly grease the bottom of a muffin pan, bottom & sides then place the bacon inside around the sides of the pan.  Add salsa then the broken egg, discard the shell. Put butter on top of the egg. Top with salt & paprika.  Bake until egg is firm, remove and place the egg in the center of the pineapple slice.  Serve warm.

SERVING:  1                                        TIME:  15 minutes

SERVING TIP:  (**)If using half a fresh peach slice a small amount of the rounded side so that the peach sits properly to hold the egg.  Either  pineapple or  peach can be warmed by baking  about 5 minutes.
